A 30-minute cake using pre-made Angel food cake and fresh berries.
Slice the angel food cake in half.
Combine the heavy whipping cream and coconut extract in a bowl and mix with electric beaters until peaks form.
Spread a layer of whipped cream on the bottom section of the cake. Top with fresh berries.
Place the top back on the cake, add another layer of whipped cream and berries.
Top with flaked coconut and mint leaves. Sift confectioner's sugar over the top.
