Loaded Breakfast Tater Tots

These loaded breakfast tater tots are perfect for brunch or breakfast for dinner. Base your ingredient quantities on how many people you are going to serve. We used 2 bags of tater tots to serve 10-12 people.

Ingredients

  • Tater tots
  • Grape tomatoes sliced in half
  • Mushrooms sliced
  • Spinach roughly sliced
  • Bacon
  • Breakfast sausage
  • Sour cream
  • Eggs
  • Green onions diced
  • Mild cheddar cheese shredded

Instructions

  1. In a large pan cook your sausage and bacon. Set aside on a baking tray covered in aluminum foil to keep warm.

  2. In a second large pan cook your tomatoes and mushroom in a tablespoon of oil. Set aside in a casserole dish covered in aluminum foil to keep warm.

  3. Cook your tater tots in the oven according to the package directions.

  4. Put out small baking dishes and have guests arrange their loaded tater tots with toppings.

  5. If they want to add egg, they can crack it over the top.

  6. Add all dishes that contain fresh spinach, egg, or cheese back into the oven to melt the cheese and wilt the spinach. Note: if they have cracked an egg, it will need to remain in the oven for approximately 10-minutes until the whites of the egg are cooked through.
