Yummy Chocolate Cookie S’mores

Some of the best s'more making cookies are Fudge Stripes cookies. They have the perfect chocolate to cookie ratio, letting the toasted marshmallow melt right in! But as I like to make it a little more fun and always try something new, we also used Keebler E.L. Fudge cookies and Keebler Chip's Deluxe cookies. I thought the kids would get a kick out of eating one of the Keebler elves, s'mores style!

Ingredients

  • chocolate cookies, cookie sandwiches are best
  • marshmallows
  • roasting sticks
  • fire pit or microwave works to heat them up too
  • plate

Instructions

  1. We built a nice wood fire and ate a yummy hot dog dinner, letting our wood burn down to nice and hot coals, perfect for toasting marshmallows. We added one or two marshmallows to a roasting sticks and placed them over our fire. Then we turned the sticks around the around, until the marshmallows were toasted to our liking.
  2. - You can heat up marshmallows anytime by placing 2 or 3 on a plate into the microwave for 15-20 seconds.
  3. For the cookies that are single, you'll need 2 of each cookie. Carefully remove your toasted marshmallow from the roasting stick and place in between the 2 cookies. These cookie s'mores are quite a mouthful, with extra gooeyness. Keep a napkin handy!

  4. For cookie sandwiches, we opened up one cookie and placed the toasted marshmallow inside, then closed him back up. My kids loved having a bit of each Keebler elf, Ernie, Elwood, and Fast Eddie. These were their favorite s'mores to make. With the thin layer of chocolate on each cookie, it's the perfect combination of cookie, chocolate, and marshmallow.
