Add diced bacon to a large pot over medium heat and cook until crispy. Using a slotted spoon remove the crispy bacon onto a plate lined with paper towels.

Add 2 tablespoons butter over the fat from the bacon and allow to melt. Add flour and whisk to combine. Gradually incorporate milk and chicken broth, whisking constantly and bring to boil.

Add potatoes to the pot and season with salt and pepper. Allow to boil for aprox 20-25 minutes, until the potatoes are tender. Once the potatoes are cooked, stir in the cheddar cheese and 1 tablespoon of bacon bits. Taste and season with extra salt and pepper, if needed. Add your favorite toppings and serve.
