Sift the flour, salt, and baking powder together in a large bowl.
Add the Greek yogurt and stir together with a wooden spoon or dough attachment on a mixer.
Roll your dough into a ball and leave on a floured surface for approximately 30-minutes.
Form your dough into a log and cut it into 6-8 even slices.
Roll each of your slices into a ball, and then using a rolling pin flatten to about 1/4" thick.
Optional: Spray your cast-iron skillet with a cooking spray
Heat your cast-iron skillet until it's completely heated, and place your formed flatbread onto it. Cook each side for 3-minutes, waiting until large bubbles form on the surface before flipping it over. The cooked side should have brown spots on it.
