Berry Salad with Honey Lemon Dressing

Make this delicious berry salad with lemon honey dressing to serve with fried chicken and waffles.

Ingredients

Berry salad

  • 2 cups arugula
  • 2 cups strawberries
  • 1 cup blackberries
  • 1 cup blueberries

Caramelized pecans

  • 2.25 oz bag of pecans
  • 2 tbs sugar
  • 1 tsp butter
  • 1 tsp water

Honey lemon dressing

  • 2 tbs olive oil
  • 1 1/2 tbs vinegar
  • 1 tsp honey
  • 1 tsp lemon curd
  • 1 tsp ground mustard

Instructions

Honey lemon dressing

  1. Combine all ingredients in a bowl and refrigerate until ready to serve. If the ingredients separate before serving, stir it again.

Caramelized pecans

  1. Add the sugar, butter, and water in a small saucepan over low heat.

  2. Add the pecans and toss to combine.

  3. Pour the pecans onto a baking sheet covered with parchment paper, draining off any excess liquid.

Berry salad

  1. Chop the strawberries into smaller pieces and combine all other ingredients in a bowl. Toss it all together gently. Serve it with the dressing on the side.
