If you love breakfast for dinner you will want to try our delicious breakfast quesadillas, this yummy breakfast casserole, or even these ham and cheese puff pancakes. You will also want to make these fried chicken and waffles with a berry salad.
Breakfast for dinner
I’m not a huge fan of eating breakfast for dinner, however, a couple of my kids love it. They’ve occasionally opted for a bowl of cereal if they don’t like what we’ve cooked for dinner. My daughter’s favorite meal though is fried chicken and waffles, and it’s the one breakfast for dinner meal that I can get on board with. The best part about this easy meal is we make a gluten-free version for my son which he absolutely loves too.
This is a meal we make about once a month so I’m going to show you exactly what we use because it makes this meal quick and easy to pull together on busy sports nights.
Fried chicken and waffles
I’m going to give you my little secret here, we use package ingredients for our fried chicken and waffles. There are great gluten-free options out there for both too.
Fried chicken
Ingredients:
- Chicken strips – we serve 3 chicken tenders per person
- Kentucky Kernel Seasoned Flour – regular and gluten-free
- Eggs
Instructions:
Divide the seasoned flour between 2 bowls. Coat a piece of chicken in the seasoned flour, dip it in the beaten eggs, and then back into the flour.
Put the chicken into the fryer for 6-8 minutes.
Tip: Fry the gluten-free chicken tenders first so that there is no cross-contamination.
Waffles
Ingredients:
- Waffle mix – we normally use the Bisquick in both gluten-free and regular, but also love the live-G-free brand from Aldi.
- Read the box for the remainder of the ingredients
Instructions:
Make up your waffle mix and cook your waffles in a waffle iron.
Tip: Keep them warm in the oven on low heat.
Berry salad
We serve our fried chicken and waffles with a delicious salad on the side. Our favorite is a berry salad with homemade honey lemon dressing. It contains loads of fresh ingredients.
Ingredients:
- Fresh berries – blueberries, blackberries, and strawberries
- Arugula
- Caramelized pecans
- Honey lemon dressing

- 2 cups arugula
- 2 cups strawberries
- 1 cup blackberries
- 1 cup blueberries
- 2.25 oz bag of pecans
- 2 tbs sugar
- 1 tsp butter
- 1 tsp water
- 2 tbs olive oil
- 1 1/2 tbs vinegar
- 1 tsp honey
- 1 tsp lemon curd
- 1 tsp ground mustard

Combine all ingredients in a bowl and refrigerate until ready to serve. If the ingredients separate before serving, stir it again.

Add the sugar, butter, and water in a small saucepan over low heat.

Add the pecans and toss to combine.

Pour the pecans onto a baking sheet covered with parchment paper, draining off any excess liquid.

Chop the strawberries into smaller pieces and combine all other ingredients in a bowl. Toss it all together gently. Serve it with the dressing on the side.
