If you love to grill as much as I do, you’ll definitely love this simple and delicious barbecue chicken skewers recipe that works great for dinners or any family & friends backyard gathering.
These grilled chicken skewers are an all time barbecue crowd pleaser favorite dish. Tender chicken pieces flavored with olive oil, garlic and lime are one our staple dishes that will be on repeat all summer long.
You can add any vegetables you prefer to these skewers or even better make some separate skewers with your vegetable selection and serve with the meat. My favorite addition to these chicken skewers is a fresh made tzatziki on side and crispy pita bread.
The chicken skewer marinade couldn’t be more simple. It’s just olive oil, minced garlic, chopped cilantro, lime juice, soy salt and honey, salt and pepper. You don’t need to marinate these skewers for a long time, around 30-40 minutes will do the job.
You can serve with side dishes like corn on the cob or potato salad, even a green salad will work well.
Just a quick note! If you’re using wooden skewers, remember to soak them 10-30 minutes in warm water prior to start cooking.
Easy Barbecued Chicken Skewers Recipe
Ingredients:
- 1 pound chicken breast, cut in medium cubes
- lime juice from 2 limes
- 1 tablespoon honey
- 2 tablespoons soy sauce
- 3 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup fresh cilantro, chopped
- salt and pepper
Method:
- Combine all marinade ingredients in a large bowl and mix.
- Add chicken pieces in a sealable plastic bag and add 3/4 of marinade to the bag. Refrigerate for at least 30 minutes to 8 hours. Save the marinade left for basting when grilling.
- Prepare grill to medium high heat. Place marinated chicken pieces on soaked wooden skewers/ metal skewers.
- Grill chicken for 3-4 minutes, baste with some of the left marinade marinade and flip chicken skewers. Don’t baste the cooked side. Grill for another 3 minutes until chicken is cooked through.
Serve with tzatziki on side, some pita bread, corn on the cob or potato salad.
