How to Make Mixed Berry Simple Syrup
I love berry season! I always plan to make the most of it and try a new recipe highlighting berries, from old fashioned jams to pie fillings. This time I wanted to try the mixed berry simple syrup. We add store bought syrup to pretty much everything sweet during summer: refreshing lemonade and drinks, pancakes, waffles, ice cream so why not making homemade mixed berry syrup?!
The recipe is so simple, I can’t believe I haven’t tried to make syrup before! You just wash and prepare your selection of berries (cut strawberries in slices) add them to a large pan with sugar and 25 minutes later the syrup is ready! You can use fresh or frozen berries: raspberries, strawberries, blueberries, blackberries, etc. I have used strawberries and raspberries for this recipe.
How to use the simple mixed berry syrup:
- Add a small quantity of syrup to a glass and fill with sparkling water. Stir well, add some ice cubes and couple of fresh raspberries to it and you have the perfect summer lemonade!
- Add it to non-alcoholic drinks or cocktails.
- Drizzle over ice cream, pancakes, crepes or waffles.
- Mix with yogurt and fresh chopped berries for a quick and healthy breakfast or dessert.
Mixed Berry Simple Syrup Recipe
Ingredients:
- 2 cups raspberries (fresh or frozen)
- 2 cups strawberries (fresh or frozen, sliced)
- 1&1/4 cup sugar
- 1 tablespoon fresh lemon juice
Method:
- In a large saucepan, combine all ingredients: raspberries, strawberries, sugar and 1 tablespoon fresh lemon juice. Give them a good stir and bring to a simmer over medium heat. Cook on medium heat for almost 25 minutes, string from time to time. At this point the mixture should be slightly thickened.
- Turn off the heat and allow the syrup to cool down.
- Place a sieve over a clean pot (line it with a clean muslin cloth, if you have one). Pour the syrup through the sieve and press with the back of a wooden spoon to get the syrup.
- Add to bottles/jars and refrigerate.
