Mandarin orange popsicles are creamy and combine vanilla ice cream with fresh mandarin oranges.
Scoop a cup of vanilla ice cream into a bowl and set it on the counter to soften (not melt).
Cut your mandarins in half and using a citrus juicer, squeeze the juice into a small jug.
Scoop roughly half the ice cream into each popsicle holder.
Combine half the mandarin juice with the other half of the ice cream, mixing until combined. Pour on top of the ice cream in the popsicle holders, and then top with the remaining juice.
Freeze for about an hour and then insert popsicle sticks. Continue freezing until completely set.
