  • pound  sausage I have used Italian sausages, casing removed
  • 1 small onion finely chopped
  • teaspoons minced garlic
  • 1 can fire roasted diced tomatoes
  • 16  oz.  uncooked short pasta: penne farfalle or ziti
  • 2 tablespoons dried Italian mix spice herbs

  1. In a large skillet over medium-high heat, add the olive oil then the chopped onions and garlic and cook for a couple of minutes. Add the sausage meat and cook it, breaking it apart into small pieces for 2-3 minutes.
  2. Add diced tomatoes to the skillet, stirring to combine, add uncooked pasta too and give it a good stir. Add dried herbs to the mixture and 3 cups of water. Bring the mixture to a boil, reduce it to a simmer then cover the skillet and allow cooking until the pasta is al dente, for around 10 minutes, or follow what is written on the pasta pack.
  3. Serve the pasta with some Parmesan cheese shredded on top.
