Add mixed veggies: brussels sprouts, potatoes and carrots to a medium bowl and toss them with the olive oil, salt, pepper and chopped fresh oregano until evenly coated.

Allow to sit for 10 minutes before transferring to the oven.

Preheat oven to 400F/ 200C.

Prepare a sheet pan/ baking dish and add some baking pepper on the bottom.

Add mixed veggies to the pan and give them another good toss.

Drizzle a bit more olive oil on top and place in the oven.

Roast for 30-40 minutes until soft on the inside and crispy on the outside.

Serve warm.
