Valentine Heart Cookie Sandwiches

I'm in LOVE with these Valentine Heart Cookie Sandwiches! These adorable cookies were truly meant to beat as one—they're perfectly sweet, cute, pink, and topped with festive red sprinkles. What's not to LOVE?!

Ingredients

  • Your favorite sugar cookie dough or strawberry cake mix
  • Red or pink food coloring optional if using cake mix
  • Frosting any color you love!
  • Red sprinkles

Instructions

  1. Prepare Cookies:
  2. If using sugar cookie dough, color it pink or red using food coloring. Roll it out and cut heart shapes.
  3. Alternatively, you can use strawberry cake mix dough. Flatten the dough and cut out large hearts using your cookie cutter. Bake according to package instructions.
  4. Create Smaller Hearts (optional):
  5. For extra cuteness, right after baking, use a smaller heart-shaped cutter to create mini hearts from the larger ones while still warm. Enjoy leftover cookie pieces as a tasty bonus!
  6. Assemble Cookie Sandwiches:
  7. Spread frosting on one heart-shaped cookie.
  8. Gently press another heart cookie on top to form a sandwich. Smooth any frosting that spills out along the edges with your knife or finger.
  9. Decorate with Sprinkles:
  10. Carefully dip all sides of the frosting-filled edges into a bowl of red sprinkles. Shake gently to remove excess.
