This Italian Meatball Pizza Skillet is delicious, everyone in the family loved it! It’s going to become one of our staple recipes to make each month!
Italian Pizza Meatball Skillet
Look what can come from cleaning out my freezer?! I always forget what’s even in there, but it’s making me get creative in the kitchen. Meatballs, check. Rice, check. Leftover pizza sauce, check! And I LOVE when I can randomly throw a meal together out of thin air and it tastes good! And I LOVE a one pot meal.
I’m a huge fan of one pot meals. They are so easy for me to cook and super simple for feeding my family. And I especially love cooking meals in a skillet – One Pot Italian Pizza Meatball Skillet.
What ingredients I used:
- Costco Italian meatballs
- Trader Joe’s frozen jasmine rice
- leftover pizza sauce from last week’s pizza delivery (I always ask for extra!!)
- and some mozzarella to top!
Really, really simple recipe. It’s one of those semi-homemade recipes that give you just enough to work with and make your own!
Italian Pizza Meatball Skillet Recipe
Ingredients:
- 24 pre-made Italian meatballs
- 1/2-3/4 cup pizza sauce
- 2 cups jasmine rice – cooked
- 1/2 cup shredded mozzarella
- 2 T. oil – olive oil or avocado oil
Method:
1. Add oil to a skillet on medium heat. Add meatballs and let them warm through, browning a bit on the outside of the meatballs.
2. Pour in pizza sauce and let it heat up and simmer for 5 minutes.
3. Add the rice and let it soak up a lot of that sauce, stirring. NOTE: You can add in a little extra oil here to help fry up the rice a little extra crispy if you like!
4. Sprinkle on your cheese and let it heat up until it starts to melt.
Now it’s ready to serve. Yum!
