Simple Skillet Flatbread Recipe
I cannot stop eating this homemade flatbread. I’ve been pairing it with hummus for lunch or using it to make paninis with leftovers from dinner the night before.
How to make flatbread
Sift the flour, salt, and baking powder together in a large bowl. It helps them mix a little better and make sure there are no clumps. Then, add the Greek yogurt and stir or use a dough hook on a mixer to combine thoroughly.
Spread a little flour onto a hard surface, knead your dough into a ball and leave it to rest for about 30-minutes. I might have left mine a little longer because a repairman arrived right as I was about to start cooking, of course. It was just fine though.
Form the dough into a log shape and then cut it into 6-8 even slices. I cut mine into 6 because I wanted the flatbread to be just a little larger. You might want it a little larger if using for a pizza base, or smaller if using for hummus or a panini.
Roll each of your slices into a ball and set aside. Using a rolling pin, roll each slice out until it’s about a 1/4 inch thick. Again, it’s your choice how you roll it out, whether you want a circle or oval shape.
I prefer to spray my cast-iron skillet before cooking this bread, but you don’t have to, just make sure it’s hot before placing the flatbread on it. Cook the flatbread for about 3-minutes on each side. You’ll see from the photo below it rises in large bubbles when it’s time to flip it. It should have brown spots on the cooked side.
Set aside to cool a little. It can be stored in a sealed bag out of the refrigerator for up to 5 days, or freeze what you aren’t going to use right away.

- 3 cups Bread flour + 2tbs extra to flour surface
- 1 1/2 cups Greek yogurt
- 1 tsp Baking powder
- 1 tsp Salt

Heat your cast-iron skillet until it's completely heated, and place your formed flatbread onto it. Cook each side for 3-minutes, waiting until large bubbles form on the surface before flipping it over. The cooked side should have brown spots on it.
