Upgrade a Classic: Caramelized Mushroom & Onion Grilled Cheese Sandwich

This gourmet upgrade of the classic grilled cheese is full of sweet caramelized mushrooms and onions, gooey cheese and finished in butter! Trust me, once you’ll try this recipe you’ll never crave a classical grilled cheese again! Not to mention that it will just hold together whether you’re having it as is or dunking it into tomato soup.

The crispy thick slices of bread cooked in melted butter, the gooey cheeses and the sweet caramelized mixture of onions and mushroom will deliver the perfect comfort food! So easy and quick to make, you’ll have them ready to be served in less than 20 minutes.

One quick tip before jumping to the recipe – grate your cheeses and let them stay at room temperature for at least 15 minutes, to make sure you’ll have the perfect melted cheese!

Caramelized Mushroom & Onion Grilled Cheese Recipe

Ingredients

  • 8 thick slices good quality bread (my favorite is Sourdough bread)
  • 12 oz Gruyere cheese grated, left at room temperature
  • 6 oz Mozzarella cheese grated, left at room temperature
  • 2 yellow onions, peeled and cut into slices
  • 1 cup mushrooms, medium cut into slices
  • 1 teaspoon fresh thyme, roughly chopped
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • salt and pepper to season

Method

  1. Add 2 tablespoons butter and olive oil to a pan and heat over medium heat. Add sliced onions and mushrooms to the pan and sauté, stirring from time to time for about 10 minutes. Season with salt and pepper and add chopped thryme to the pan. Mix and set aside. Transfer filling to a plate.
  2. Wipe with paper towel the pan and add remaining 2 tablespoons butter to heat over medium heat. Add 2 slices of bread and a bit of cheese to the top of each slice and cook. Once it starts to melt a little add 2 tablespoons of the caramelized onions& mushrooms filling over the top of one of the slices.
  3. When the bread is golden brown and crunchy, after 2-3 minutes of cooking, sandwich the pieces of bread together and cook on low heat while pressing with cooking spatula until cheese is fully melted.
  4. Transfer to a plate and repeat with the rest of the ingredients.
