Grilled Pineapple with Vanilla Ice Cream
This is seriously one of the best and easiest summer desserts ever! The sweetness of caramelized grilled pineapple is the star of this recipe…sooo good!
All you need is a big, fresh pineapple (even a bit overly ripe if possible, will have more intense flavor and more juice) a good paring knife, brown sugar, cinnamon (and some rum…) and…a grill!
It is not so difficult to cut, peel and core a whole pineapple. Just cut the top and the bottom off and place the pineapple on a chopping board straight up to cut the skin off. Remove any brown parts with the knife and cut in slices. You can remove the core from each slice. If you’re lucky you can sometime find a peeled and cored whole pineapple in the fresh fruit area of the shops and all you have to do it’s just slicing it into rings.
Place pineapple rings in a large baking dish with rub them with some brown sugar and cinnamon. Allow them to stay for 10-15 minutes before grilling.
Grill the pineapple slices and serve with a big scoop of vanilla ice cream on top and drizzle some chocolate sauce.
Grilled Pineapple with Vanilla Ice Cream Recipe
Ingredients:
- 2 cups brown sugar
- 1 teaspoon ground cinnamon
- 1 fresh pineapple, cored and cut into rings
- cooking spray
- vanilla ice cream and chocolate sauce to serve
Method:
- In a large baking dish add pineapple rings and rub them with brown sugar and cinnamon mixture. You can add some rum too, if preferred. Allow them to stay for at least 10 minutes before grilling.
- When you’re ready, heat a grill pan over medium-high heat until hot or use the outside barbecue. Lightly grease the pan with cooking spray and add pineapple slices leaving some space between the rings. Cook for 1-2 minutes per side until you see the grill marks and the color changes to brownish. Transfer to individual serving plates and allow to cool down a bit before serving.
- To serve, top each grilled pineapple ring with a big scoop of vanilla ice cream and drizzle with chocolate sauce. Serve immediately.
