Autumn salad recipe with turkey, pear, and Gorgonzola
Ingredients
- Mixed leafy greens – green leaf lettuce, butter lettuce, pea shoots, sorrel, spinach
- Turkey breast
- Pears – Bosc, Asian, or red pears
- Gorgonzola
- Walnuts
- Dried cranberries
- Balsamic maple dressing
Instructions
Combine the leafy greens in a large salad bowl.
On a cutting board, chop the turkey into bite-sized cubes, and slice the pears into strips.
Prepare the crumbled Gorgonzola and the walnut and dried cranberry topping.
Add the turkey and pear to the salad greens. Top with Gorgonzola, chopped walnuts, and dried cranberries.
In a bowl, whisk together the maple syrup, garlic Balsamic, and olive oil. Serve your salad, and then top with dressing.

- 6 oz Mixed greens green leaf lettuce, butter lettuce, pea shoots, sorrel, spinach
- 2 cups Turkey breast diced
- 2 Pears sliced
- 3 oz Gorgonzola cheese crumbled
- 1 cup Cranberry walnut mix
- 1/2 cup Olive oil
- 1/4 cup Garlic Balsamic vinegar
- 2 tbs Maple syrup

Combine the first five ingredients in a large salad bowl.

Whisk together the olive oil, garlic Balsamic vinegar, and maple syrup.
