My favorite cheese to use for a grilled cheese sandwich with pesto is white cheddar, but my partner prefers sharp cheddar. I highly recommend you choose any of the cheeses listed below for your sandwich. Decide which one works for you. Get creative and use a couple of different ones together.

There are so many delicious toppings you can include on your grilled cheese sandwich with pesto, including:
- Sun-dried, fresh, or roasted tomatoes
- Grilled or shredded chicken
- Fresh basil
- Caramelized mushroom and onions
Instead of using regular basil pesto, you can also use sun-dried tomato pesto.
Make a delicious grilled cheese with pesto sandwich.
- 2 slices bread
- 2 slices white cheddar cheese or your favorite cheese
- 1-2 tbs pesto store-bought or homemade
Heat the skillet to med-low.
Butter one side of each slice of bread.
Place one slice of bread butter side down on the skillet. Top with cheese and pesto, and then top with the second slice of bread (buttered side facing up).
Grill your sandwich slowly, at least 5 minutes each side until browned. Flip and brown the other side too.
