Grilled cheese sandwiches with tomato soup are often on the meal plan at our house. It’s so quick and easy to make and our local farmers are selling tomatoes by the box right now. They are perfect for busy nights, and weekend lunches as well.

What kind of cheese goes good with pesto?

My favorite cheese to use for a grilled cheese sandwich with pesto is white cheddar, but my partner prefers sharp cheddar. I highly recommend you choose any of the cheeses listed below for your sandwich. Decide which one works for you. Get creative and use a couple of different ones together.

  • Mozzarella (preferably fresh)
  • Provolone
  • White Cheddar
  • Sharp Cheddar
  • Smoked Gouda

Whichever cheese you decide to use, make sure it’s good quality.

  • 2 slices bread
  • 2 slices white cheddar cheese or your favorite cheese
  • 1-2 tbs pesto store-bought or homemade
  • butter
  1. Heat the skillet to med-low.

  2. Butter one side of each slice of bread.

  3. Place one slice of bread butter side down on the skillet. Top with cheese and pesto, and then top with the second slice of bread (buttered side facing up).

  4. Grill your sandwich slowly, at least 5 minutes each side until browned. Flip and brown the other side too.
